Flavoured milk is a sweetened dairy drink made with milk, sugar, food colourings and artificial or natural flavourings. Flavoured milk is often pasteurized using ultra-high-temperature (UHT) treatment, which gives it a longer shelf-life than plain milk. Pre-mixed flavoured milk is sold in the refrigerated dairy case alongside other milk products. Flavoured sweetened powders or syrups which are added to plain milk are also available.




How to Make Flavoured Milk?
Whether you drink cow’s milk, almond milk, or some other variety of milk, you can give these beverages a tantalizing flavour without an overwhelming dose of unnecessary sugar.

Flavoured milk is gaining popularity day by day  because it is cheaper cold drink as  compared  to  non  milk  based  drinks  and  possesses  more  nutritive  value.  There  are enormous  ranges  of  flavouring  materials  available  for  flavoured  milk  which  may  be  of natural or chemical origin.

India  produces  a  variety  of  herbs  and  spices,  which  are  abundantly  used  in domestic  kitchen. Their addition to milk products would enhance image, add variety, increase product consumption, provide some health benefits and improve storage quality of dairy products. The combination of spices in suitable form to milk would result into herbal milk which will offer specified therapeutic properties with nutrition.



Spices  such  as  Cinnamon,  black  pepper,  cardamom,  bay  leaf,  nutmeg  etc,  have various therapeutic properties. which are  not  affected  by  bacterial  contamination, they  have  much  longer  shelf  life , A relatively new flavour by incorporating these spices can be  used  to  prepare  flavoured  milk. 

This  traditional  product  contains  a  significant proportion  of  milk  nutrient  along  with  some  therapeutic  properties.  Such types of products are very useful in infants and growing children due to its nutritional value which provides nourishment.



Keeping these points in view, technology for production of sterilized herbal flavoured milk is developed with following objectives.

·         To develop sterilized herbal flavoured milk.
·         To  evaluate  the  chemical,  microbiological  and  sensory  characteristics  of  the product.
·         To evaluate the acceptability of the product using sensory tests.
·         To study the shelf life of the prepared herbal flavoured milk.
